HOW TO LONG WILL AN OPENED CAN OF SURSTRÖMMING LAST IN THE FRIDGE?

After having guests over and eating surströmming. In many cases there will be a few fermented herrings left in at least one can. It's a pity to throw them away. Keep them. They can for example be used to make an alternative version of the Swedish dish called Janssons frestelse which means Jansson's temptation and that's a creamy potato and fish gratin. Instead of using ansjovis, surströmming is used.

​How to store opened surströmming
Why the fish often gets disposed is because an opened can of surströmming can transfer its smell in your fridge to other food. Even if you put several layers of platic film around the can or even put the fish in a zip locker bag the smell will contaminate other food. Esepecially milk, butter, cheese and other such products. 

​You can prevent this by using a good enough glass jar with a tight-fitting rubber seal. With this solution in place you can store the fermented herring for up to three or four days in a fridge that holds a temperature at at around 4°C/39.2°f. ​It's best to use the liquid from the can to store the herring. If the liquid is gone you can to put sliced an raw onion in the bottom of the can and put the herring on top without any liquid.
